Fishcake, Peas, Carrots and Potatoes

Healthy, speedy dinner using minimal ingredients.

20 mins

1) Using any fishcakes you like from any supermarket put them in the oven following the instructions on the packet.
2) Place new potatoes in a pan of boiling water for 20 mins. 
3) After 10 minutes put the peas and carrots in a pan of boiling water- leave to simmer. 
4) It should all be ready at the same time- so plate up with a drink of your choice.

Any veg can be used with this dish and any fish cakes.

Fishcakes in the picture are thai prawn and lemongrass from ALDI.

Tomato, Cheese and Ham Omelette

Quick and simple dinner/brunch: tomato, cheese and ham omelette

7 mins

1) Beat three eggs in bowl and add salt and pepper.
2) Heat dash of olive oil in saucepan - make sure its hot.
3) Pour egg mixture into sauce pan.
4) Sprinkle chopped tomato, ham and cheese over omelette whilst the eggs are still runny.
5) Carefully flip over omelette with a spatula (remember it's not a pancake).
6) Plate up with a drink of your choice.

If you can't flip the omelette just fold it.

Bolognese with Penni-Pasta

Yummy bolognese mince with veg and pasta

15-20 mins

1) Add dash of olive oil into hot pan with chopped onion. Add mince till brown.
2) Add chopped carrots, courgette and a clove of garlic with salt, pepper and a veg stock cube.
3) Put pasta in saucepan of boiling water with pinch of salt leave for 10 mins.
4) Once pasta is simmering add passata. Stir and leave to simmer until pasta is ready.
5) Once cooked drain pasta and plate up with a drink of your choice. 

Use whatever veg you have- it doesn't have to be exact to ingredients above. E.g mushrooms

Best to use hard pasta as it lasts in your cupboard for longer.

Lemon and Garlic Chicken with Left-over New Potatoes

Lemon garlic chicken with left-over new potatoes and veg
An easy recipe made with minimal ingredients that's healthy and tasty.
15-20 mins


1) Chop chicken breast, one clove of garlic and new potatoes.
2) Put dash of olive oil in frying pan, add chicken when hot.
3) Place whatever veg you have in a saucepan with boiling water from the kettle and leave to cook.
4) When chicken is almost white add garlic and left-over new potatoes, then squeeze half a lemon into pan- stir.
5) Add salt, pepper and thyme to chicken, stir and fry for 7 mins- continuously stir.
6) Check veg is cooked and plate up with a drink of your choice.
 If you don't have left-over new potatoes part boil them first for 10 mins.
